Broccoli Fritters

You've heard of corn fritters but I bet you haven't even thought about broccoli fritters. They are delicious, easy and will warm up your insides during the fresh Spring days.

Ingredients

  • 3 Broccoli heads

  • 3/4 cups of plain flour (Gluten intolerant can use flaxseed meal or gluten free flour)

  • 1 & 1/2 cups of grated Grana Padano

  • 2 eggs

  • Olive Oil to grease fry pan

  • Best served with Ratatouille

  • Alternatively homes or goats feta to serve

Method

Firstly cut the stems off the broccoli. Peel some larger stalks of broccoli to access the 'softer meat' under the hard skin. Place broccoli in boiling water for 5min or longer depending on how soft you want them. Strain and add to a mixing bowl. Now add flour cheese and eggs then mash together with a potato masher.

Heat some oil in a frying pan. In batches
