I know, bacteria are deemed the enemy, however it has become much more popular knowledge to understand that "good" bacteria are essential for our immune and digestive systems.
1 medium cabbage
2 Tbsp sea salt
1 Tbsp of Caraway seeds
Core and shred the cabbage. Mix all the ingredients in a bowl until blended then pound with a clean wooden mallet or squeeze with your hands for a good 8-10min to release the juice. Once juicy transfer to an air-tight mason jar or crock pot. Push the mixture down so the juice covers it completely. Close tightly and let sit at room temperature for 3 days before storing it in the fridge. You can keep your sauerkraut in the fridge for several months but I have a feeling you will have devoured your delicious batch within the first month.
