Chocolate & Goji Protein Balls

What a perfect snack for a busy bee! Here's how you can make them;

Ingredients

  • ½ cup Almond meal

  • ¼ 3+hours Soaked Cashews (crushed in blender)

  • ¼ cup Cacao powder

  • 2-3 scoops of Vanilla Protein Powder

  • Small handful of dried Goji Berries

  • ¼ Cup of melted Coconut Oil

  • 4 tbsp. of natural nut butter (I use ‘Mayer’s Peanut and Cocoa Spread’)

  • 2 tsp. of Rice Malt Syrup or 4 soaked dates

  • 3 Tbsp. of Desiccated Coconut for rolling in

Method

Sprinkle Desiccated coconut on a chopping board. Add all dry ingredients except coconut into a bowl. Add liquid ingredients.

Mix and knead together with clean hands (the rule is if too wet I add more almond meal or too dry add almond milk). Roll into bite size ball with hands and roll in desiccated coconut then put into container. Place container in the fridge for balls to set.
